Over the past nine months, we've seen egg prices soar due to the bird flu. Whether you're baking, cooking, or simply making breakfast, eggs are a staple in many households. With prices continuing to climb, finding affordable alternatives is key to keeping meals on the table without breaking your budget.

The good news is there are many great egg substitutes available that can help you stay within your budget, especially for baking. Here are a few easy-to-find, budget-friendly options—all of which are available through Helping Harvest!


Mashed Banana


Use 1/4 cup of mashed banana for each egg you need to replace. It adds a little sweetness to your recipes, making it perfect for pancakes, quick breads, or cookies. 


Yogurt


If you have yogurt on hand, it is a great replacement for eggs in baking. Use 1/4 cup of yogurt for each egg, and enjoy the creamy texture yogurt adds to your recipes.


Applesauce


For every egg in a recipe, you can use 1/4 cup of unsweetened applesauce. It works especially well in cakes, muffins, and other baked goods where the egg’s main job is to provide moisture.


Baking Powder and Vinegar


For lighter, fluffier baked goods, a mix of baking powder and vinegar can do the trick. Combine 1 tablespoon of baking powder with 1 tablespoon of vinegar for every egg. This substitution works great for cakes and cupcakes.
